  1. Whisk lime juice, apple cider vinegar, white vinegar, salt, and sugar in a bowl until dissolved.

  2. Blend the hot peppers in a food processor or smash them in a mortar.

  3. In an empty bottle, add the thyme, culantro, cilantro, bay leaf, oregano, ají dulce peppers, black peppercorns, garlic, and blended hot peppers.

  4. Use a funnel to pour in the liquid mixture, filling to the middle of the bottle neck.

  5. Top with oil, seal, and shake.

  6. Let ferment near a window for one week, then enjoy.
